Farm Easter Ham

We are brining a ham for Easter. Because, we're curing the ham for flavor and not for future use I cut the salt by little less than half that I normally would have used. Add two and a half tablespoons of pickling spice from Terra Spice Marketplace  two cups of brown sugar and about 1.5 to 2 cups of salt (used two different salts, because different salts will give different flavors) put all in two quarts water. Bring to boil reduce to simmer mix till dissolved then add about another two quarts of ice cold water and put the ham in and let it sit for a day or two. And just before you start to cook the ham you can rinse it off or you can soak it in fresh clean water-- the longer you soak it the less salty it will be. Also, my friend said could use two Star of Anise in the brine, we didn't have any so we didn't. 
After the ham was Brined. Raise the ham a little bit off of the bottom of the pan and add a some water and two cups of pineapple juice let it cook for 2+ hours. But halfway through I added most of a glaze of 3/4 cup maple syrup 1/4 cup of honey about a tablespoon and a half of yellow mustard and apple cider vinegar enough to give it a zing mixed together. The rest soon after. When done cooking make a gravy from the juices. May you have a blessed Easter!

From farm to belly. Browned beef with onions and peppers. Precooked carrots, potatoes, celery, butternut squash, more onions while partially cooking barley before adding everything together with a spice mix called 'hint of thyme' from Terra Spice Marketplace 

  After a flat tire in the middle of no where with a ton of feed on the truck--this stew is going to make it all right. God Bless!
